
One of my favourite meals is a curried seafood salad at a local restaurant called The Pilot House. This is my version. It's pretty simple. But very tasty.
Cook some scallops in about 3 tablespoons of butter with some dry curry powder. The amount is up to you. I added about half a teaspoon but could have used more!
Once cooked, remove the scallops and reserve the curry butter for the dressing.
To this curry butter add some lemon juice, maple syrup and salt to taste.
I started with organic spring salad and added organic cucumbers and grape tomatoes then in went the scallops and dressing.
Super light, super delicious.
