Over the past while, I’ve drastically changed my eating habits, cutting out red meat, gluten, most dairy, and—yep—sugar. But let’s be real, I still love a good treat now and then. I have a serious sweet tooth, and sometimes, I just want something candy-like without wrecking my body with sugar.


That’s where maple syrup comes in. I absolutely love it—not just for its rich, deep sweetness but also because it's a gift from the trees themselves. There’s something magical about that.


One of my favorite flavors has always been caramel, so I decided to make my own version using maple syrup. It’s ridiculously simple, naturally sweet, and absolutely delicious.


Maple Syrup Caramel Recipe

Ingredients

  • ¼ cup butter (or a dairy-free alternative)

  • ½ cup pure maple syrup

  • 3 tablespoons cream (a dairy-free alternative may or may not work here but give it a try!)


Instructions

  1. Melt the butter in a saucepan over medium heat.

  2. Add the maple syrup and whisk in the cream.

  3. Keep whisking and simmering until the caramel thickens to your desired consistency. If it gets too thick, add a little more cream. If it’s too thin, keep reducing.


How I Love to Use It

One of my favorite ways to enjoy this caramel is on popcorn. I air-pop my kernels, toss them with a bit of butter and salt, and then drizzle this golden goodness over top. For extra crunch and a hit of salt, I throw in some plain kettle-cooked potato chips and salted pistachios. The sweet, salty, and crunchy combo is next-level.
